Fill up and cool down with this summer-fresh soup enriched with the protein of Greek yogurt and Feta.

Ingredients:

2 large English cucumbers, finely chopped 1 1/2 cups | 375 mL plain Greek yogurt 1 tbsp | 15 mL fresh lemon juice 3 cloves garlic, peeled and minced 1/4 cup | 60 mL fresh dill, stems removed, finely chopped 1/4 cup | 60 mL fresh parsley, stems removed, finely chopped 1/4 cup | 60 mL good quality extra virgin olive oil pinch crushed red pepper flakes salt and freshly ground black pepper to taste handful ice cubes 1/4 cup | 60 mL Tre Stelle® Feta Cheese, crumbled finely chopped fresh dill and parsley to garnish

Instructions:

In a blender or food processor, combine cucumber, yogurt, lemon juice, garlic, dill, parsley, olive oil and red pepper flakes. Blend until smooth. Taste and season with salt and black pepper. Keep soup chilled until ready to serve. Only add ice cubes if you are serving immediately. Otherwise, omit the ice cubes, cover and refrigerate until ready to serve. Pour into serving bowls, top with crumbled Feta Cheese and herbs.
